About me and why chocolate...
My way of making chocolates is not the usual way here in Belgium, I never have beeing working with Belgium couverture for as long I'm chocolatier.
I choose the small companies and when possible organic, Direct Trade and with respect for the people and the environment. Its my way of looking at the chocolateworld and its a "feelgood" situation I must have before I work with bean-to-bar chocolatemakers.
